Vegan Pancakes (yes they taste good oh non-believer)
In a medium bowl combine the following dry ingredients:
- 1 cup unbleached white flour
- 1/4 cup whole wheat pastry flour
- 2 tablespoons cane sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- cinnamon to taste
In a separate bowl combine the following liquid ingredients:
- 2 tablespoons canola oil
- 1/2 cup water
- 3/4 cup soy milk
- 1/2 teaspoon vanilla
- 3/4 cup frozen blueberries (opt)
Heat your pan/griddle to med-high heat and use 1/4 cup batter for each pancake – you know what to do!
EAT & B MERRY!
Oh these sound good. I wish I had read this before I went to the store so I could have picked up some blueberries! Tomorrow is my last lazy morning before I go back to work–I may just have to make pancakes for breakfast… Thanks for the recipe!
