Organic & ‘Natural’ Foods @ Costco

I felt the need to share my small shopping list from Costco.

  • Stretch Island Fruit Leather 48 piece variety pack @ $10.65
  • Pacific Organic Chicken Broth 6- 32oz @ $9.49
  • Rice Dream Organic Rice Drink 12- 1 qt @ $15.99
  • Earthbound Farms Organic Spring Mix @ $3.99
  • Ranier Organic Fuji & Gala Apples 12 count @ $7.99 & $6.99
  • Organic Whole Wheat Bread 2 pack @ $5.25

There are many other offerings – just have to be ever watchful for offerings.  I feed 5 wide mouths by shopping deals in Bellingham,WA. My favorite stores: Community Food Co-op, Trader Joe’s, Super Supplements (Strothers is their brain trust) and Costco. In that order.

Northwest Christmas breakfast

Vegan Pancakes (yes they taste good oh non-believer)

In a medium bowl combine the following dry ingredients:

  • 1 cup unbleached white flour
  • 1/4 cup whole wheat pastry flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • cinnamon to taste

In a separate bowl combine the following liquid ingredients:

  • 2 tablespoons canola oil
  • 1/2 cup water
  • 3/4 cup soy milk
  • 1/2 teaspoon vanilla
  • 3/4 cup frozen blueberries (opt)

Heat your pan/griddle to med-high heat and use 1/4 cup batter for each pancake – you know what to do!

Well, the kids will have about 3 weeks off for Christmas break – supposed to be 2 weeks. Can you see me smiling? Of course, you can. Not much driving around happening here, what with Bellingham, WA having sold most of its plows a few years back (not supposed to get much snow here). We’ve had enough snow to bring out the local sculptors. Our neighbor Tim Probst of A Better Clean Windows & Gutters (his site is here: window cleaning Bellingham WA) created a beautiful polar bear family alongside Lakeway Drive, which made the front page of today’s Bellingham Herald. Here’s Tim carving the daddy bear:

Flats Tapas Bar, Bellingham

Tom introduced me to Flats Tapas Bar in the Old Fairhaven section of Bellingham, WA. He said it was a reminder of his visits to tapas bar’s in Brazil and NJ and wanted me to experience some of the cuisine. I was already happy with cachaca, so show me more!

Exposed brick walls, muted lighting and comfy seats greeted me. The menu was so varied, it needed studying (didn’t want to miss any culinary treat).  There were salads, cold dishes, hot dishes and wine and spirits galore. I began with a salad of fresh organic greens and then watched all the perfect little meals come: Bravas (roasted yams in Spanish spices with romesco and aioli sauce), Bayona (grilled sausage and cheese with balsamic glaze and peasant bread), Galicia (seared scallops on white beans with carmelized onion, aioli and hazelnut pesto), Castilla (mini Spanish meatballs in a saffron tomato sauce). I could go on and on.  What a treat!

What was most satisfying for me was the variety. The flavors fired and flickered in my mouth; all different and delicious. The kind of variety I’ve been living in my life: some east coast, some west coast, some Wall Street, some Mothering – a Hungarian goulash, my mother would say. 12/3

What kind of experience do u get?

My friend, Renee, has a rant. When she goes out for meals or drinks, the service is not good. Recently she went to Le Chat Noir (Black Cat) in Fairhaven. The server had amnesia when it came to click to read the full restaurant review…
